Quinoa Stuffed Peppers

Ingredients:

  • 2lbs lean ground beef (grass fed & local)

  • 4-6 red bell peppers

  • 1 cup quinoa

  • 1 can black beans

  • 1 can corn

  • 1 red onion

  • 2 tomatoes

  • 4-6 cloves garlic

  • Fresh cilantro

  • Taco Seasoning

Directions

  1. Pre-heat oven to 350 degrees.

  2. Place quinoa in InstantPot and pressure cook for 1 minute. Do not release pressure. Allow natural release then remove.

  3. While quinoa is coming up to pressure, saute onions, garlic, and tomatoes.

  4. Added ground beef and cook 80% through.

  5. Mix in all remaining ingredients and stir throughly.

  6. Cut peppers in half and remove seeds and white

  7. Stuff peppers fully with mixture and place in a baking dish.

  8. Add a few ounce of water to bottom of baking dish and place in oven for 30-40 minutes (until peppers are soft)
