Mexican Meatloaf

Ingredients:

  • 2lbs lean ground beef or turkey (locally sourced if possible)

  • 1 (15-ounce) can black beans, drained & rinsed

  • 1 (15-ounce) can whole kernel corn, drained

  • 1/2 (4-ounce) can fire roasted diced green chiles

  • 1 cup mild chunky salsa

  • 1 packet dry taco seasoning mix

  • 3/4 cup plain breadcrumbs

  • 3 egg whites (1/2 cup)

  • Salt & peper

  • 1 (28-ounce) can enchilada sauce, divided

Directions

  1. Preheat your oven to 400 degrees and coat a 9x13 dish with cooking spray or olive oil using a paper towel

  2. In a large bowl combine turkey, black beans, corn, chiles, salsa, taco seasoning, breadcrumbs, and egg whites. Season with salt and pepper and mix thoroughly.

  3. Add mixture to baking dish and form into a loaf.

  4. Spread half of the enchilada sauce over the top and bake for 35-45 minutes

  5. Remove and top with remaining enchilada sauce. Bake for another 10-15 minutes (until no longer pink or at least 165 degrees).

  6. Remove from oven and serve with fresh cilantro, light sour cream, and avocado salsa.
