20 Minute Turkey Fiesta Bowl

Ingredients:

  • 2-3lbs ground turkey

  • Taco seasoning

  • 1-3 cups uncooked rice (use 1.5:1 ratio of water to rice)

  • 1-2 cans black beans

  • 1-2 cans sweet corn

  • Black bean salsa

  • Sour cream or light sour cream

  • 1 bundle fresh cilantro

Directions

  1. Place rice and water into rice cooker or instapot (1.5:1 ratio of water to rice) and start. When rice is finish cooking, toss in desired amount of cilantro and a squirt of lime juice (optional) and toss with a spoon.

  2. Heat a pan to medium high heat and place add ground turkey. Chop up and spread evenly then pat down (like a meat pancake). Let cook until sides start to change color. Cut into slice and flip. Turn heat up to high. Chop meat again and sprinkle seasoning in. After 3 minutes, turn heat to low and toss meat together to coat with seasoning. Remove from heat.

  3. Add desired amount of rice to bottom of meal prep containers. Top with 6-8oz of turkey. Add desired amount of black beans and corn.**

  4. Portion sour cream & salsa into small containers!**
